Crock Pot Barbecue Chicken
Utensils
- Measuring cups
- Measuring spoons
- Small mixing bowl
- Crock pot
- 1 medium onion, chopped
- 1½ teaspoons minced garlic
- 3lbs skinless chicken (boneless if you prefer)
- ⅔ cup ketchup
- ⅓ cup packed brown sugar
- 1 tablespoon chili powder
- 1 tablespoon lemon juice
- 1 teaspoon dried basil
- ½ teaspoon salt
- ¼ teaspoon pepper
- ⅛ teaspoon hot sauce
- 2 tablespoons cornstarch
- 3 tablespoons cold water
- Basic: place onion and garlic in the bottom of the crock pot and top with chicken.
- Sauce: combine all ingredients in a mixing bowl and pour over the chicken.
- Cook on low for 5-6 hours.
- Remove only the chicken from the crock pot.
- Thickener: Mix corn starch and water until smooth.
- Pour thickener mixture into the crock pot and stir until thoroughly mixed.
- Cook on high for 15 minutes or until thick.
Serve chicken over a bed of rice with sauce poured over the top.
Serve chicken with mashed potatoes and corn or beans.
